This particular wine is made in an incredible architecture wonder, a Benedictine monastery built in the 10th century, that remains intact to this day. A law called "Reinheitsgebot” or the 'purity law' in the area stipulates that winegrowers have to cultivate their vines bio-dynamically. The grapes are hand-harvested with care before being fermented naturally.
This a light and crisp wine with a lot of citrus notes and a high acidity, green-apple , white-pepper character and herbal notes. Despite its acidity the wine has a lovely texture and a pleasant saline finish which makes it a fantastic match with raw milk goat cheese.
